Cucumber and Watermelon Agua Fresca

Cool drink for hot days

Agua Fresca, which is Spanish for “fresh water,” is popular summertime drink throughout the U.S. Southwest and Latin America. Think of them as a fruit infused water rather than a juice or smoothie.  It’s a light and refreshing drink that is perfect for hot summer days. 

10 cups seedless watermelon, cut into chunks
1 cucumber, peeled and cut into chunks
2 cups cold water
1/2 medium lime, squeezed
2 tablespoons fresh mint, chopped
2 tablespoons Honey

Liquefy the watermelon, cucumber, and mint in a blender. You may have to do this in two batches. 
Stain, and then discard the pulp. Mix with cold water, honey, and lime juice. Serve over ice.
